It has a MASSIVE serving size for only about 68 calories!One morning while making pancakes for the family but not wanting to feel so loaded down by the carbs I thought I need to come up with a recipe where I can take out the flour and it still can be a pancake. Crazy, right?? Well, it can be done, I am happy to say it was so good I had to share this recipe with you.Because the batter doesn’t stick together like normal pancakes I have to admit it won’t look this beautiful as the picture on your first attempt and it’s going to be a bit messy but at the same time it will be one of the most delicious pancakes you have ever had.Serves: 1Total Time: 8 minIngredients1 mashed banana2 eggs beaten1/2 teaspoon cinnamon1/2 teaspoon vanilla extractHeat skillet, on medium heat and add safflower or coconut oil cooking spray.Combine mashed banana, 2 beaten eggs, cinnamon and vanilla. Pour in skillet to make 3 pancakes at a time. Cook for 2-3 minutes or until bottoms are golden brown then flip and cook for an additional 2-3 minutes.
